Spring Hath Sprung Stew

Sweet Potato, Carrot, Chickpea, Mushroom, Broccoli Soup!

The third way to love a chickpea. Cuz I know you chickpea lovers have been waiting on the edge of your seats for the next installment, right?

  • 1 small onion, diced
  • 2 carrots, chopped
  • 1 sweet potato, chopped
  • 6 cups veg stock or water + bouillon [my fave]
  • 1 cup broccoli florets
  • 15 oz chickpeas (1 can, or about 1 cup dried & cooked)

1. In a medium pot, heat a small drizzle of olive oil and add the onion. Cook for 4-5 minutes, until they are sizzling.

2. Add the remaining ingredients and cook 15-20 minutes, until all vegetables are tender.

Top with chopped ramps and cracked black pepper.
