Garlicky Balsamic Bruschetta with Basil



End of summer garlic and basil bruschetta with crusty bread and fresh tomatoes! Grab those end of summer tomatoes and throw these together before the warm weather is gone. I had a blast whipping these up with my friend Pati (check out her wonderful travel, lifestyle & food blog). The lovely photos you see here are by her!

Makes 10-12 toasts

1 french baguette
3 cups of diced fresh tomatoes
2 cloves of garlic, minced
a handful of basil leaves
1/4 cup of olive oil
1/8 cup of balsamic vinegar
1 teaspoon of brown sugar
salt and black pepper to taste

Make it
– Preheat the oven to broil.
-Slice the baguette into 10-12 slices (just so that they’re thick enough for a three-bite appetizer). Place the bread on a baking sheet and brush with olive oil. Place in the oven to toast 3-5 minutes, or until crispy and golden brown. Remove and set aside.
– Mix the olive oil, balsamic vinegar, brown sugar, salt in a bowl and set aside. In another bowl, combine the diced tomatoes with garlic and basil leaves. Take a slice of baguette toast and sprinkle with tomato mix and 1-2 teaspoons of the vinaigrette mix. Repeat with all of the toast.
